Look for articles by Trevor Hancock, Ron Labonte, books by David Seedhouse,
by John Raeburn and Irv Rootman, by Lennart Nordenfelt.  A classic article
by Christopher Boorse (1977), "Health as a theoretical concept," Philosophy
of Science 44: 542-573 contends that health as a positive concept (as
discussed in much hp) is fundamentally mistaken.  Hans-Georg Gadamer's book,
The Enigma of Health, is a challenging continental perspective on the
meaning of health.  Georges Canguilhem, On the Normal and the Pathological,
is a philosophical/scientific discussion of important health and disease
concepts.  Richard Levins and Cynthia Lopez (1999), "Toward an ecosocial
view of health," International Journal of Health Services 29(2): 261-293
discusses what the title says.  Try A. Caplan et al (1981). Concepts of
Health and Disease: Interdisciplinary Perspectives.  Amyrtya Sen and Martha
Nussbaum edit a volume of essays on quality of life that include
sophisticated discussions re: health.  Follow the references in any of these
and you'll soon find more than enough information.  Sorry I can't speak to
nursing per se.
