If you're at all interested in fundamental factors that focus on race,
the LaVeist public health reader is excellent: _Race, Ethnicity and
Health_ (2002). I think these readings are pretty accessible for an
undergraduate audience, but some of the chapters may be a bit
statistically sophisticated. Still, the substantive text is pretty
excellent.
