I believe it would make more sense to take the current subsidies for corn,
soybeans, etc. (that make up the main ingredients in highly processed food
products) and put those toward fruit and vegetable subsidies.

Food taxes, at least in the U.S., are usually brought up by the food
industry to divert attention from the real issues of agricultural policy:
namely, our whole agricultural system is set up in a way that makes
less-healthy foods cheaper (and highly profitable).
