If you are interested in the subjective utility and scarcity as well as the 
labor theory of value in the scholastics I can highly recommend an 
excellent book that contains a consistent history of scholastic value theory: 
 
- Langholm, Odd. 1979. Price and Value in The Aristotelian Tradition. 
Bergen etc.: Universitetsforlaget AS.  
 
However, Prof. Laurence Moss told me that it is very difficult to get this 
book in the US. But you will find a good part of its contents in: 
 
- Langholm, Odd. 1992. Economics in the medieval schools: wealth, exchange, 
value, money, and usury according to the Paris theological tradition, 
1200-1350. Leiden ; New York: E.J. Brill
