In the Mark Twain Papers there is a letter written by Annie Moffett* on 12 January 1875 to her brother Samuel. In it, Annie, on a Hartford visit, describes a luncheon which took place at three o'clock on the day before the 11th. Guests: Mr. and Mrs. John Raymond and Kate Field, obviously in Hartford for a performance of the Sellers play. Menu: 1st course-- soup 2nd course--quails and rice "croquets" 3rd course-- chicken "croquets" and salad (which she helped make) 4th course-- strawberry “short cake" 5th course-- orange ice "lastly"-- fruit and coffee Annie also describes the table setting, complete with flowers and "exquisite" dishes and demitasse spoons.
