You might begin with Uncertainty in Economic Thought, edited by 
Christian Schmidt (Edward Elgar, 1996), which has some excellent 
essays on the general topic.  Of course there is also the 
unforgettable Probability Foundations of Economic Theory (Routledge, 1994).
