Garry Wills's book "Inventing America" provides a fairly 
detailed study of how Jefferson's thought was shaped by 
the Scottish Enlightenment. You might also want to dip 
into the "Soul of the American University" by George 
Marsden for a treatment of how 18th century American 
university life was influenced by the Scottish Enlightenment. 
Marsden does not treat Smith directly, but it provides some 
interesting additional background to Wills's study.
