Anne,

You could try Sir Sanford Fleming, a school that has a good conservation
program.  It has several campuses around the Toronto area.  You can
visit their website at:

The Faculty of Information Sciences at the University of Toronto also
offers one course in preservation/conservation.  Hope this helps.
